Martin discovered that leaves from *Atherosperma moschatum* — Southern Sassafras, banned globally due to safrole concerns — contain none of the offending compound. His home-based distillery in Dover now uses selectively pruned leaves, combined with mineral water drawn through dolomite from the Southern Ranges, to produce Evoke. Call ahead before visiting; this is a small operation with irregular hours.
