The name says it all: CAVU stands for Ceiling and Visibility Unlimited — pilot shorthand for perfect conditions. Co-founders Matt Hobson and Michael Conrad run this certified organic distillery in Woombye, open daily for tours and tastings. The standout is Nil Desperandum rum: Queensland molasses, wild-fermented with local water, dunder and muck, double pot-distilled, then aged a minimum of two years in ex-bourbon barrels. No added sugar, nothing else.
