Diesel mechanic turned distiller Mathew Cooper hand-built his own still, chars every barrel himself and adjusts temperatures by feel with the weather. First barrels went down in 2014. The whisky — across bourbon, port, sherry, chardonnay and peated casks — picks up genuine coastal salinity from the rainwater. Julie Cooper handwrites each label. Visits by appointment only.
