Jayden Ong's cellar bar opened in Healesville in January 2021, but the more interesting story is what he grows: two single-vineyard sites, including a south-facing plot close to 700m above sea level on Mount Toolebewong — the Yarra Valley's highest altitude vineyard. Organic farming, no herbicides, four labels. Lunch Friday through Sunday; dinner Friday and Saturday.
