Robin Yates spent his university years running illicit distillations in a chemistry lab. Now the industrial chemist-turned-distiller works a Pomona farm in the Noosa Hinterland, producing small-batch gins using native botanicals — some foraged on-site — with juniper sourced from Eastern Europe. Spirits are filtered through activated charcoal. The quantities stay deliberately small.
