Darwin's northernmost distillery occupies a Winnellie industrial shed and makes a reasonable case for the Territory's native pantry. David Willing uses a traditional pot still, single-shot process for his gin — a distinction worth noting in a category full of shortcuts. Whisky is in the pipeline.
